Spinach Salad with Vinegar Dressing

Here's a delicious recipe I received from my Aunt Ruth. I love this vinegar dressing. Try it this weekend! Happy 4th of July! 

Vinegar Dressing:
1/2 cup olive oil
1/4 cup sugar
2 tablespoons red wine vinegar
1/2 teaspoon celery seed
1/2 teaspoon grated onion
1/2 teaspoon salt
1/2 teaspoon dry mustard

1/2 teaspoon paprika


Salad:
6-8 cups torn spinach

6 button mushrooms, sliced
5 slices bacon, cooked and crumbled
4 boiled eggs, peeled and sliced
1 carrot, peeled and julienned

In a jar with a tight fitting lid, combine the first eight ingredients; shake well. Just before serving, combine spinach, mushrooms, bacon, boiled eggs, carrots, and croutons in a large salad bowl. Add dressing and toss to coat. Makes 6-8 servings.
