Bittersweet Chocolate Mousse


Here's a yummy dessert to serve your family this summer.

4 large egg yolks
4 tablespoons sugar, divided
2 cups heavy cream, divided
8 oz. bittersweet chocolate chips, melted
1 teaspoon vanilla extract
whipped cream

In a medium saucepan, whisk together egg yolks, 2 tablespoons sugar and 3/4 cups heavy cream. Cook over medium-low heat until mixture coats the back of spoon, stirring often, about 3-4 minutes. Remove from heat. Stir in melted chocolate and vanilla. Pour into a glass bowl and cover with plastic wrap. Chill in refrigerator until cool. 

In a mixing bowl, combine remaining heavy cream and sugar and beat with an electric wire whisk until stiff peaks form. Mix half of the whipped cream into the cooled chocolate, then gently fold in the remaining whipped cream with a rubber spatula. Spoon into serving dishes. Cover and chill for 30 minutes or more. Garnish with a dollop of whipped cream. Serves 4-6
