Cara Putman's Mexican Pasta

As the mother of 4 young kids who often meets herself at the door, Cara Putman is always looking for food that will satisfy all the different appetites in her family. One day, when the desperate what-am-I-going-to-serve-for-dinner question appeared around 4 p.m., Cara desperately rifled through her panty and freezer for inspiration. The concoction below is the result…

Mexican Pasta
1 box of pasta of your choice (whatever’s in the pantry) cooked per pkg instructions
1 can of fiesta nacho soup
1 can of corn, drained
1 can of diced tomatos
1 can of black beans (optional)
1 can of green chiles (optional)
1 can black olives (optional)
1 pound of hamburger, cooked (seasoned with taco seasonings optional)
1 container of cottage cheese
1-2 cups of grated cheddar cheese

Stir together, pour in a 9x13 greased pan. Bake at 350 degrees for 30-45 minutes or until heated through. Serve with a salad and/or tortilla chips. Reheats well.
