Country Rice Cereal


Here's a recipe I like to make when I have some leftover rice. Enjoy!

3 cups cooked rice
2 cups whole milk
3 tablespoon butter
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup dried blueberries

In medium saucepan, combine rice, milk, butter, cinnamon, and salt. Bring to a boil, stirring occasionally. Reduce heat. Cover and simmer for 6-8 minutes until thickened, adding blueberries after 4 minutes. If desired, top with honey or brown sugar. Makes 6 servings.
