Cornmeal Pancakes


Here's a recipe I like to make when I want something a little different for breakfast. Enjoy!

1 cup flour
3/4 cups cornmeal
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
2 eggs
1 teaspoon vanilla
3 tablespoons melted butter

In mixing bowl, combine flour, cornmeal, sugar, baking powder, baking soda, and salt. Mix well. Add buttermilk, eggs, and vanilla. Stir in melted butter. Batter will be thick. Cook on greased skillet over medium-low heat until golden brown. Serve with butter and maple syrup. See my homemade syrup recipe HERE. Makes 8-10 pancakes.
