Our daughters love tea parties. My mother-in-law introduced us to them when my daughters were young.

Of course, there are different types of tea parties. There are pretend tea parties that I have with my granddaughter.

Tea Parties are for all ages–young and old.  

And there are the simple kind where you invite someone over for a visit and you have tea with a cookie or a scone. Then there are full-blown tea parties (Afternoon Tea or Low Tea) where you make little tea sandwiches, yummy warm scones, and sweet dainty treats to serve with your tea. This was the type of tea party my mother-in-law hosted.

And that is the type of tea party we enjoy most, for which these sandwiches would fit perfectly. We actually made these sandwiches for our youngest daughter’s bridal shower tea party. Tips on Smoked Salmon Mousse Sandwiches

When figuring out how to make these tea sandwiches, we considered various breads and wound up with two. Pumpernickel and rye. Both went really well with the salmon.

Finding smoked salmon was also a bit difficult to do here in the Midwest. But we located some from Chicken of the Sea at a grocery store in Olathe, Kansas, and I have since found it at a local grocery store. It’s not too expensive and it tastes wonderful.

Serving Smoked Salmon Mousse Canapes on Cucumbers

The last thing to consider is the cucumbers. Go with English Cucumbers. They have smaller seeds and make lovely slices. You might also enjoy serving this mousse as a canape with cucumbers for the base. Quite delicious!

Ingredients for Smoked Salmon Mousse Sandwiches

  • cream cheese
  • sour cream
  • lemon juice
  • minced onion
  • dill weed
  • prepared horseradish
  • garlic powder
  • kosher salt and freshly ground black pepper
  • smoked salmon (We went with Chicken of the Sea)
  • capers
  • English cucumber
  • thinly sliced rye or pumpernickel bread
  • butter

 

Directions for Making the Mousse

Ingredients for this Recipe

Gather your ingredients so that you have everything close at hand on the counter or table.

In a large mixing bowl, cream together the softened cream cheese until smooth. Add the sour cream, lemon juice, minced onion, dill weed, horseradish, garlic powder, salt and black pepper, mixing well to combine.

Add Salmon and Capers to the Cream Cheese Mixture

Stir in the smoked salmon and capers. Cover and chill until ready to serve.

 

Assembling the Sandwiches

Butter slices of thin rye or pumpernickel bread on one side. If serving open faced sandwiches, go ahead and cut off the crust at this time and slice into squares or triangles. If serving as closed sandwiches, assemble the sandwiches first and then cut off the crusts and slice as desired.

Cover and Refrigerate Salmon Mousse until Ready to Serve

When ready to serve, layer mousse onto buttered pieces of bread and top with thinly sliced cucumbers. Top with another piece of bread or serve open-faced. Slice into quarters.

This recipe will make 20-40 small sandwiches.

  • 8 oz. cream cheese
  • 1/2 cup sour cream
  • 1 tablespoons lemon juice
  • 2 teaspoons dried minced onion
  • 2 teaspoons dill weed
  • 1 teaspoon prepared horseradish
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 7 oz. package smoked salmon Chicken of the Sea
  • 3 tablespoons capers
  • 1 medium English cucumber sliced thin
  • 10 slices thinly sliced rye or pumpernickel bread buttered

Instructions

  • Gather your ingredients so that you have everything close at hand on the counter or table.

Prepare the Mousse

  • In a large mixing bowl, beat the cream cheese until smooth.
  • Add sour cream, lemon juice, minced onion, dill weed, horseradish, garlic powder, salt and black pepper. Mix well to combine.
  • Gently stir in the smoked salmon and capers. Cover and chill until ready to serve.

Make the Sandwiches or Canapes

  • To make the open-faced sandwiches or canapes, first prepare the bread, by buttering one side of each piece.
  • Remove the crusts with a sharp knife and then quarter each piece. (You may also slice into thirds to make oblong fingers.)
  • Spread the salmon mousse on the buttered sides of bread.
  • Top with thinly sliced cucumbers. If desired, garnish with fresh parsley or other herbs.
  • This recipe will make 30-40 open-faced sandwiches, and will serve 15-20 people.

Notes

*If desired, you may place another piece of bread on top of the cucumber to create a closed sandwich. If you choose this style, you will need an additional 10 slices of bread. Remove the crusts and slice the sandwiches after putting them together.  
**Unless otherwise indicated, all butter on this site is salted.
